In the cellar, the team strives to express the energy, texture, and essence of this land, while creating wines that can be contemplated on their own or elevate a meal. Each plot is vinified separately with indigenous yeasts, and minimal intervention guides every step: gentle extractions, limited sulphur, and élevage only in concrete vats, large foudres, or neutral barrels.

The low-yielding nature of Roc des Anges’s old vines, ranging from 10 to 20 hectolitres per hectare, naturally limits production volumes.
